  • 2 medium zucchini sliced thin
  • 1 cup breadcrumbs Panko preferred
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 large eggs beaten

Instructions 

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine breadcrumbs, Parmesan cheese, garlic powder, salt, and black pepper.
  3. Dip zucchini slices into beaten eggs, then coat with breadcrumb mixture.
  4. Place coated zucchini slices on the prepared baking sheet.
  5. Bake for 25-30 minutes, or until golden and crispy. Serve immediately.
