- 1.5 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 0.5 teaspoon salt
- 0.5 cup vegetable oil
- 0.75 cup sugar
- 2 large eggs
- 1 cup mashed ripe bananas about 2-3 bananas
- 1 cup grated zucchini
- 1 teaspoon vanilla extract
Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
In a large bowl, whisk together the flour, baking soda, cinnamon, and salt.
In another bowl, mix the oil and sugar until well combined. Add the eggs, one at a time, beating well after each addition. Stir in the mashed bananas, grated zucchini, and vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
Pour the batter into the prepared loaf pan. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
