Ingredients 

For the Birria

  • 2 lbs Beef chuck roast
  • 4 Dried guajillo chiles stems and seeds removed
  • 2 Dried ancho chiles stems and seeds removed
  • 1 Onion quartered
  • 4 cloves Garlic
  • 1 teaspoon Cumin
  • 1 teaspoon Dried oregano
  • 2 cups Beef broth
  • 1 cup Water

For the Tacos

  • 12 Corn tortillas
  • 2 cups Shredded cheese like Oaxaca or mozzarella
  • 1 cup Chopped cilantro
  • 1 cup Diced onions

Instructions 

  1. 1. In a large pot, add the beef, guajillo chiles, ancho chiles, onion, garlic, cumin, oregano, beef broth, and water. Bring to a boil, then reduce heat and simmer for 2.5 to 3 hours until the beef is tender.
  2. 2. Remove the beef and shred it. Strain the broth and set aside.
  3. 3. Heat a skillet over medium heat. Dip a tortilla in the reserved broth, then place it in the skillet. Add shredded beef and cheese. Fold the tortilla in half and cook until crispy.
  4. 4. Serve the tacos with chopped cilantro and diced onions.
