  • 2 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Red Bell Pepper, chopped
  • 2 cans Black Beans, drained and rinsed
  • 1 can Diced Tomatoes
  • 1 cup Vegetable Broth
  • 1 tablespoon Chili Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and chopped red bell pepper. Cook for another 5 minutes.
  4. Add black beans, diced tomatoes, vegetable broth, chili powder, ground cumin, paprika, salt, and black pepper. Stir well to combine.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally.
  6. Serve hot, garnished with your favorite toppings like sour cream, cheese, or cilantro.
