Cajun Corn and Crab Bisque

Ingredients 

Main Ingredients

  • 2 tablespoon Butter
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 2 cups Corn kernels
  • 3 cups Chicken broth
  • 1 cup Heavy cream
  • 1 teaspoon Cajun seasoning
  • 1 lb Crab meat
  • to taste Salt and pepper

Instructions 

  1. 1. Melt the butter in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  2. 2. Add the corn kernels and cook for another 5 minutes.
  3. 3. Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  4. 4. Use a blender to puree the mixture until smooth. Return to the pot.
  5. 5. Stir in the heavy cream, Cajun seasoning, and crab meat. Cook until heated through.
  6. 6. Season with salt and pepper to taste. Serve hot.
