Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 cup vegetable oil
  • 4 eggs
  • 2 cups grated carrots
  • 1 cup chopped walnuts optional

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  2. In a large bowl, combine flour, sugar, baking powder, baking soda, salt, and cinnamon. Mix well.
  3. In another bowl, beat together the oil and eggs. Stir in the grated carrots.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Fold in the walnuts if using.
  5. Pour the batter into the prepared baking pan. Bake for 40 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
