Ingredients

  • 1 cup Butter softened
  • 1 cup White sugar
  • 1 cup Brown sugar packed
  • 2 Eggs
  • 1 teaspoon Vanilla extract
  • 2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • ½ teaspoon Salt
  • 2 cups Shredded coconut

Instructions 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the butter, white sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. Combine the flour, baking soda, and salt; gradually stir into the creamed mixture. Mix in the coconut.
  5. Drop dough by rounded teaspoonfuls onto the prepared baking sheet.
  6. Bake for 8 to 10 minutes in the preheated oven, or until lightly browned. Allow cookies to cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.
