Ingredients 

Main Ingredients

  • 1 lb Chicken Breast cut into bite-sized pieces
  • 1 cup Barley
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 3 carrots Carrots sliced
  • 2 stalks Celery sliced
  • 6 cups Chicken Broth
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 teaspoon Dried Thyme

Instructions 

  1. 1. Heat a large pot over medium heat. Add a bit of oil and cook the chicken until browned. Remove and set aside.
  2. 2. In the same pot, add the onion, garlic, carrots, and celery. Cook until softened.
  3. 3. Add the barley, chicken broth, salt, pepper, and thyme. Bring to a boil.
  4. 4. Reduce heat and simmer for 30 minutes, or until barley is tender.
  5. 5. Add the cooked chicken back to the pot and heat through.
  6. 6. Serve hot and enjoy!
