Main Ingredients
- 1 whole Chicken cut into pieces
- 4 large Carrots peeled and sliced
- 3 stalks Celery chopped
- 1 large Onion peeled and halved
- 2 cloves Garlic minced
- 1 bunch Fresh dill
- 1 bunch Fresh parsley
- to taste Salt
- to taste Black pepper
1. Place the chicken in a large pot and cover with water.
2. Bring to a boil, then reduce heat and simmer for about 30 minutes, skimming off any foam.
3. Add the carrots, celery, onion, garlic, dill, and parsley to the pot.
4. Season with salt and pepper to taste.
5. Simmer for another 1.5 hours, until the chicken is tender and the vegetables are cooked through.
6. Remove the chicken from the pot, shred the meat, and discard the bones.
7. Return the shredded chicken to the pot and stir to combine.
8. Serve hot, garnished with additional fresh dill or parsley if desired.
