Colcannon Recipe
Colcannon is a traditional Irish dish made from mashed potatoes with kale or cabbage.

Main Ingredients
- 2 pounds potatoes peeled and cubed
- 1 cup kale chopped
- 1 cup milk
- 4 tablespoons butter
- 1 bunch green onions chopped
- to taste salt
- to taste black pepper
Boil the potatoes in a pot of salted water until tender, about 15 minutes.
While the potatoes are boiling, melt 2 tablespoons of butter in a skillet over medium heat. Add the chopped kale and green onions, and cook until softened, about 5 minutes.
Drain the potatoes and return them to the pot. Add the remaining butter and milk, and mash until smooth.
Stir in the cooked kale and green onions. Season with salt and black pepper to taste.
Serve hot.
