Ingredients

  • 200 g Spaghetti cooked and cooled
  • 1 cup Cherry tomatoes halved
  • 1 cup Cucumber diced
  • ½ cup Red onion thinly sliced
  • ¼ cup Olive oil
  • 2 tablespoon Red wine vinegar
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. 1. Cook the spaghetti according to package instructions. Drain and rinse with cold water. Set aside.
  2. 2. In a large mixing bowl, combine the cherry tomatoes, cucumber, and red onion.
  3. 3. Add the cooled spaghetti to the bowl with the vegetables.
  4. 4. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and black pepper.
  5. 5. Pour the dressing over the spaghetti and vegetables. Toss to combine.
  6. 6. Chill in the refrigerator for at least 30 minutes before serving.
