  • 3 pounds Eye of Round Roast
  • 2 teaspoons Salt
  • 1 teaspoon Black Pepper freshly ground
  • 2 tablespoons Olive Oil
  • 4 cloves Garlic minced

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Season the roast with salt and pepper.
  3. Heat olive oil in a roasting pan over medium-high heat. Sear the roast on all sides until browned.
  4. Add minced garlic to the pan and cook for another minute.
  5. Place the pan in the preheated oven and roast for about 90 minutes or until the internal temperature reaches 135°F (57°C) for medium-rare.
  6. Remove from the oven and let it rest for 10-15 minutes before slicing.
