Gelato Ingredients
- 2 cups Whole Milk
- 1 cup Heavy Cream
- ¾ cup Sugar
- 1 teaspoon Vanilla Extract
- 4 large Egg Yolks
1. In a saucepan, combine milk and cream. Heat until just simmering.
2. In a bowl, whisk together sugar and egg yolks until pale and thick.
3. Slowly pour the hot milk mixture into the egg mixture, whisking constantly.
4. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon.
5. Remove from heat and stir in vanilla extract.
6. Cool the mixture completely, then churn in an ice cream maker according to the manufacturer's instructions.
7. Transfer to a container and freeze until firm.
