Ingredients 

Main Ingredients

  • 4 cups Potatoes, diced about 4 medium potatoes
  • 1 cup Cucumber, diced
  • ½ cup Red onion, finely chopped
  • ½ cup Kalamata olives, pitted and sliced
  • ½ cup Feta cheese, crumbled
  • ¼ cup Fresh parsley, chopped
  • ¼ cup Olive oil
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Dried oregano
  • to taste Salt and pepper

Instructions 

  1. 1. Boil the diced potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, combine the cooled potatoes, cucumber, red onion, olives, feta cheese, and parsley.
  3. 3. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
  4. 4. Pour the dressing over the potato mixture and toss gently to combine.
  5. 5. Chill in the refrigerator for at least 1 hour before serving.
