- 2 lbs potatoes peeled and cut into wedges
- ¼ cup olive oil
- ¼ cup lemon juice
- 3 cloves garlic minced
- 1 teaspoon dried oregano
- to taste Salt and pepper
- 1 cup chicken broth
- 2 tablespoon fresh parsley chopped (optional)
Preheat oven to 400°F (200°C).
In a large bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper.
Add potato wedges to the bowl and toss to coat.
Transfer potatoes to a baking dish and pour chicken broth over them.
Roast in the preheated oven for 45 minutes, or until potatoes are golden and tender, stirring occasionally.
Garnish with fresh parsley before serving, if desired.
