Ground Beef and Vegetable Stew

- 1 lb Ground Beef
- 2 cups Carrots, diced
- 2 cups Potatoes, diced
- 1 cup Onion, chopped
- 1 cup Celery, chopped
- 4 cups Beef Broth
- 2 tablespoon Tomato Paste
- 1 teaspoon Salt
- 0.5 teaspoon Black Pepper
- 1 teaspoon Dried Thyme
1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
2. Add the chopped onion and celery to the pot. Cook until the vegetables are tender, about 5 minutes.
3. Stir in the tomato paste, salt, pepper, and thyme. Cook for another 2 minutes.
4. Add the carrots, potatoes, and beef broth. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the vegetables are tender.
5. Taste and adjust seasoning if necessary. Serve hot.
