Ingredients 

Main Ingredients

  • 2 lbs Lamb shoulder, cut into chunks
  • 4 Carrots, peeled and chopped
  • 4 Potatoes, peeled and chopped
  • 1 Onion, chopped
  • 4 cups Beef broth
  • 2 tablespoon Tomato paste
  • 2 cloves Garlic, minced
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 2 tablespoon Olive oil

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add lamb chunks and brown on all sides. Remove and set aside.
  3. 3. In the same pot, add onion and garlic, cook until softened.
  4. 4. Stir in tomato paste, thyme, salt, and pepper.
  5. 5. Return lamb to the pot, add carrots, potatoes, and beef broth.
  6. 6. Bring to a boil, then reduce heat and simmer for 2 hours.
  7. 7. Serve hot and enjoy!
