  • 1 kg Potatoes peeled and cubed
  • ¼ cup Olive Oil
  • 2 tablespoon Red Wine Vinegar
  • 1 Red Onion thinly sliced
  • ¼ cup Fresh Parsley chopped
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, combine the olive oil, red wine vinegar, salt, and pepper.
  3. 3. Add the cooled potatoes, red onion, and parsley to the bowl. Toss to coat evenly.
  4. 4. Adjust seasoning with more salt and pepper if needed. Serve at room temperature or chilled.
