Ingredients 

Salad Ingredients

  • 1 bunch Kale stems removed, leaves chopped
  • 1 cup Cherry Tomatoes halved
  • ¼ cup Olive Oil
  • 2 tablespoons Lemon Juice freshly squeezed
  • 1 clove Garlic minced
  • ¼ cup Parmesan Cheese grated
  • to taste Salt
  • to taste Black Pepper freshly ground

Instructions 

  1. 1. Wash and dry the kale using a salad spinner.
  2. 2. Remove the stems and chop the kale leaves.
  3. 3. In a large mixing bowl, combine the kale, cherry tomatoes, olive oil, lemon juice, and minced garlic.
  4. 4. Toss the salad until the kale is well coated with the dressing.
  5. 5. Add the grated Parmesan cheese and season with salt and freshly ground black pepper to taste.
  6. 6. Serve immediately or refrigerate for up to 2 hours before serving.
