Ingredients

  • 1 cup lentils rinsed
  • 1 cup ham diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup carrots sliced
  • 1 cup celery sliced
  • 6 cups chicken broth
  • 1 teaspoon thyme dried
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste

Instructions 

  1. 1. In a large pot, heat some oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. 2. Add the diced ham, carrots, and celery. Cook for a few minutes until the vegetables start to soften.
  3. 3. Stir in the lentils, chicken broth, thyme, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the lentils are tender.
  4. 4. Adjust seasoning if needed. Serve hot.
