Ingredients

  • 4 cups Beetroot, cooked and grated
  • 2 cups Kefir
  • 1 cup Cucumber, diced
  • 4 tablespoon Dill, chopped
  • 2 tablespoon Green onions, chopped
  • 1 teaspoon Salt
  • 1 teaspoon Sugar
  • 4 units Boiled eggs, halved

Instructions 

  1. 1. In a large mixing bowl, combine the grated beetroot, kefir, diced cucumber, chopped dill, and green onions.
  2. 2. Add salt and sugar to taste. Mix well.
  3. 3. Chill the soup in the refrigerator for at least 1 hour before serving.
  4. 4. Serve cold, garnished with halved boiled eggs.
