- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 1 cup cooked bacon, crumbled
- 0.5 cup sour cream
- 2 tablespoon chives, chopped
- to taste salt and pepper
Preheat your oven to 400°F (200°C).
Wash and dry the potatoes. Pierce each potato several times with a fork.
Place the potatoes on a baking sheet and bake for about 60 minutes, or until tender.
Remove the potatoes from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out the insides, leaving a small border of potato intact.
In a bowl, mix the scooped-out potato with cheddar cheese, bacon, sour cream, salt, and pepper. Spoon the mixture back into the potato skins.
Return the stuffed potatoes to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
Garnish with chopped chives and serve hot.
