- 2 cups Dried navy beans soaked overnight
- 1 large Onion chopped
- 2 cloves Garlic minced
- 2 cups Carrots chopped
- 2 cups Celery chopped
- 8 cups Chicken broth
- 1 teaspoon Dried thyme
- 1 teaspoon Salt to taste
- 0.5 teaspoon Black pepper to taste
1. Rinse and drain the soaked navy beans.
2. In a large pot, sauté the onion and garlic until fragrant.
3. Add the carrots and celery, cook for a few minutes.
4. Add the navy beans, chicken broth, thyme, salt, and pepper.
5. Bring to a boil, then reduce heat and simmer for 1.5 hours or until beans are tender.
6. Adjust seasoning if needed and serve hot.
