- 2 lbs Pork shoulder, cut into cubes
- 1 tablespoon Vegetable oil
- 1 Large onion, chopped
- 3 cloves Garlic, minced
- 1 lb Roasted green chiles, peeled and chopped
- 4 cups Chicken broth
- 2 Large potatoes, peeled and diced
- 1 teaspoon Salt
- 1 teaspoon Ground cumin
- ½ teaspoon Dried oregano
- ¼ teaspoon Black pepper
1. Heat the oil in a large pot over medium heat. Add the pork and cook until browned on all sides.
2. Add the onion and garlic to the pot and cook until softened.
3. Stir in the green chiles, chicken broth, potatoes, salt, cumin, oregano, and black pepper.
4. Bring the mixture to a boil, then reduce the heat and simmer for about 1 hour, or until the pork is tender and the potatoes are cooked through.
5. Serve hot and enjoy!
