- 4 large onions, thinly sliced
- 2 tablespoon olive oil
- 1 cup sugar
- ½ cup red wine vinegar
- 1 teaspoon salt
Heat olive oil in a large skillet over medium heat.
Add the sliced onions and cook, stirring occasionally, until they are soft and caramelized, about 25-30 minutes.
Add the sugar, red wine vinegar, and salt. Stir to combine.
Reduce the heat to low and cook for another 15 minutes, stirring occasionally, until the mixture is thick and jam-like.
Let the onion jam cool before transferring it to a jar or container. Store in the refrigerator.
