Panamanian Sancocho Recipe
A traditional Panamanian chicken soup, hearty and flavorful.

Main Ingredients
- 1 whole Chicken cut into pieces
- 2 cups Yuca peeled and chopped
- 2 cups Yam peeled and chopped
- 1 cup Corn cut into chunks
- 1 cup Carrots peeled and chopped
- 1 cup Potatoes peeled and chopped
- 1 medium Onion chopped
- 4 cloves Garlic minced
- 1 bunch Cilantro chopped
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 8 cups Water
1. In a large pot, add the chicken pieces and water. Bring to a boil.
2. Skim off any foam that forms on the surface.
3. Add the yuca, yam, corn, carrots, potatoes, onion, and garlic.
4. Season with salt and black pepper. Reduce heat and simmer for 1.5 hours.
5. Add chopped cilantro and cook for another 10 minutes.
6. Serve hot and enjoy!
