Ingredients 

Pie Crust

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup unsalted butter cold and cubed
  • ¼ cup ice water

Filling

  • 5 cups peaches peeled and sliced
  • 1 cup granulated sugar
  • ¼ cup brown sugar
  • ¼ cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon lemon juice

Instructions 

  1. Preheat oven to 425°F (220°C).
  2. In a mixing bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs. Stir in ice water until dough forms a ball. Divide dough in half and shape into discs. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  3. Roll out one disc of dough on a lightly floured surface to fit a 9-inch pie dish. Transfer dough to pie dish. Trim even with edge of plate.
  4. In a large bowl, combine peaches, granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice. Pour into crust.
  5. Roll out remaining dough to fit top of pie; place over filling. Trim, seal, and flute edges. Cut slits in top. Bake for 45-50 minutes or until crust is golden brown and filling is bubbly. Cool on a wire rack.
