Ingredients

  • 1 lb kale chopped
  • 1 lb potatoes peeled and diced
  • 1 lb chorizo sliced
  • 1 large onion chopped
  • 4 cloves garlic minced
  • 8 cups chicken broth
  • 2 tablespoon olive oil
  • to taste salt
  • to taste black pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. 2. Add the sliced chorizo and cook for a few minutes until it starts to brown.
  3. 3. Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
  4. 4. Stir in the chopped kale and cook until wilted, about 5 minutes. Season with salt and black pepper to taste.
