Portuguese Kale Soup Recipe

- 1 lb kale chopped
- 1 lb potatoes peeled and diced
- 1 lb chorizo sliced
- 1 large onion chopped
- 4 cloves garlic minced
- 8 cups chicken broth
- 2 tablespoon olive oil
- to taste salt
- to taste black pepper
1. Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until softened.
2. Add the sliced chorizo and cook for a few minutes until it starts to brown.
3. Add the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
4. Stir in the chopped kale and cook until wilted, about 5 minutes. Season with salt and black pepper to taste.
5. Serve hot and enjoy!
