Ingredients 

Main Ingredients

  • 2 cups Rotini pasta cooked and drained
  • 1 cup Cherry tomatoes halved
  • 1 cup Cucumber diced
  • 1 cup Bell peppers diced (use a mix of colors)
  • ½ cup Red onion thinly sliced
  • ½ cup Black olives sliced
  • ¼ cup Feta cheese crumbled

Dressing

  • ¼ cup Olive oil
  • 2 tablespoon Red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic minced
  • 1 teaspoon Dried oregano
  • to taste Salt and pepper

Instructions 

  1. 1. Cook the pasta according to the package instructions. Drain and rinse under cold water.
  2. 2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell peppers, red onion, black olives, and feta cheese.
  3. 3. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, dried oregano, salt, and pepper.
  4. 4. Pour the dressing over the pasta salad and toss to combine.
  5. 5. Chill in the refrigerator for at least 30 minutes before serving.
