Main Ingredients
- 2 large Cucumbers smashed and cut into bite-sized pieces
- 1 teaspoon Salt
- 2 cloves Garlic minced
- 2 tablespoon Rice Vinegar
- 1 tablespoon Soy Sauce
- 1 tablespoon Sesame Oil
- 1 teaspoon Sugar
- 1 tablespoon Sesame Seeds toasted
1. Smash the cucumbers with a rolling pin or the flat side of a knife until they crack and split. Cut into bite-sized pieces.
2. Place the cucumbers in a colander and sprinkle with salt. Let sit for 10 minutes, then drain any excess water.
3. In a mixing bowl, combine garlic, rice vinegar, soy sauce, sesame oil, and sugar. Stir until sugar is dissolved.
4. Add the cucumbers to the bowl and toss to coat evenly with the dressing.
5. Sprinkle with toasted sesame seeds before serving.
