Southern Fried Chicken Gizzards Recipe

- 1 lb chicken gizzards
- 2 cups buttermilk
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 quart vegetable oil for frying
1. Rinse the chicken gizzards and trim any excess fat.
2. Soak the gizzards in buttermilk for at least 2 hours or overnight in the refrigerator.
3. In a mixing bowl, combine flour, salt, black pepper, garlic powder, and paprika.
4. Heat the vegetable oil in a deep fryer to 350°F (175°C).
5. Dredge the soaked gizzards in the flour mixture, ensuring they are well coated.
6. Fry the gizzards in batches for 5-7 minutes or until golden brown and crispy.
7. Remove from oil and drain on paper towels. Serve hot.
