Ingredients

  • 6 cups potatoes, peeled and cubed
  • 1 cup mayonnaise
  • 2 tablespoon yellow mustard
  • 1 cup chopped celery
  • ½ cup chopped onion
  • 3 units hard-boiled eggs, chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup sweet pickle relish

Instructions 

  1. 1. Boil the potatoes in a large pot until tender, about 15 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, combine mayonnaise, mustard, celery, onion, eggs, salt, pepper, and relish.
  3. 3. Add the cooled potatoes to the bowl and mix gently until well coated.
  4. 4. Chill in the refrigerator for at least 1 hour before serving.
