Spinach Salad with Warm Bacon Mustard Dressing

- 6 cups fresh spinach washed and dried
- 4 slices bacon chopped
- ¼ cup red onion thinly sliced
- ¼ cup apple cider vinegar
- 2 tablespoons Dijon mustard
- 1 tablespoon honey
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Cook the bacon in a skillet over medium heat until crispy. Remove and set aside, leaving the bacon fat in the skillet.
In a mixing bowl, whisk together the vinegar, mustard, honey, salt, and pepper.
Reheat the bacon fat in the skillet and add the vinegar mixture. Cook for 1-2 minutes until slightly thickened.
In a large bowl, combine the spinach, bacon, and red onion. Pour the warm dressing over the salad and toss to combine.
Serve immediately.
