Ingredients

  • 6 cups fresh spinach washed and dried
  • 4 slices bacon chopped
  • ¼ cup red onion thinly sliced
  • ¼ cup apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions 

  1. Cook the bacon in a skillet over medium heat until crispy. Remove and set aside, leaving the bacon fat in the skillet.
  2. In a mixing bowl, whisk together the vinegar, mustard, honey, salt, and pepper.
  3. Reheat the bacon fat in the skillet and add the vinegar mixture. Cook for 1-2 minutes until slightly thickened.
  4. In a large bowl, combine the spinach, bacon, and red onion. Pour the warm dressing over the salad and toss to combine.
  5. Serve immediately.
