Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 6 cups Chicken broth
  • 1 can Diced tomatoes (14.5 oz)
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano
  • 1 package Cheese tortellini (9 oz)
  • 4 cups Fresh spinach
  • to taste Salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
  2. Add minced garlic and cook for another minute.
  3. Pour in chicken broth and diced tomatoes. Stir in dried basil and oregano. Bring to a boil.
  4. Add cheese tortellini and cook according to package instructions, usually about 7-9 minutes.
  5. Stir in fresh spinach and cook until wilted, about 2 minutes. Season with salt and pepper to taste.
  6. Serve hot and enjoy!
