Spinach Tortellini Soup
A hearty and comforting soup with spinach and cheese tortellini.

Main Ingredients
- 1 tablespoon Olive oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 6 cups Chicken broth
- 1 can Diced tomatoes (14.5 oz)
- 1 teaspoon Dried basil
- 1 teaspoon Dried oregano
- 1 package Cheese tortellini (9 oz)
- 4 cups Fresh spinach
- to taste Salt and pepper
Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Pour in chicken broth and diced tomatoes. Stir in dried basil and oregano. Bring to a boil.
Add cheese tortellini and cook according to package instructions, usually about 7-9 minutes.
Stir in fresh spinach and cook until wilted, about 2 minutes. Season with salt and pepper to taste.
Serve hot and enjoy!
