  • 4 Poblano peppers
  • 1 cup Cooked rice
  • 1 cup Black beans drained and rinsed
  • 1 cup Shredded cheese
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Cut the poblano peppers in half lengthwise and remove the seeds.
  3. In a mixing bowl, combine the cooked rice, black beans, shredded cheese, cumin, chili powder, salt, and pepper.
  4. Stuff the poblano pepper halves with the rice mixture and place them in a baking dish.
  5. Bake in the preheated oven for 30 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  6. Serve hot and enjoy!
