- 4 Poblano peppers
- 1 cup Cooked rice
- 1 cup Black beans drained and rinsed
- 1 cup Shredded cheese
- 1 teaspoon Cumin
- 1 teaspoon Chili powder
- 1 teaspoon Salt
- 1 teaspoon Pepper
Preheat your oven to 375°F (190°C).
Cut the poblano peppers in half lengthwise and remove the seeds.
In a mixing bowl, combine the cooked rice, black beans, shredded cheese, cumin, chili powder, salt, and pepper.
Stuff the poblano pepper halves with the rice mixture and place them in a baking dish.
Bake in the preheated oven for 30 minutes, or until the peppers are tender and the cheese is melted and bubbly.
