Ingredients

  • 1 lb Pork Tenderloin
  • 1 cup Spinach chopped
  • ½ cup Feta Cheese crumbled
  • 1 clove Garlic minced
  • 1 tablespoon Olive Oil
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Butterfly the pork tenderloin by slicing it lengthwise, being careful not to cut all the way through.
  3. In a bowl, mix the chopped spinach, crumbled feta cheese, and minced garlic.
  4. Spread the spinach mixture evenly over the inside of the pork tenderloin.
  5. Roll up the tenderloin and tie it with string to secure.
  6. Rub the outside of the tenderloin with olive oil, salt, and black pepper.
  7. Place the tenderloin in a baking dish and bake for 40 minutes, or until the internal temperature reaches 145°F (63°C).
  8. Let the tenderloin rest for 10 minutes before slicing and serving.
