Ingredients 

Main Ingredients

  • 200 g rice noodles
  • 1 cup shredded carrots
  • 1 cup sliced bell peppers
  • ½ cup chopped cilantro
  • ¼ cup chopped peanuts

Dressing

  • 3 tablespoon soy sauce
  • 2 tablespoon lime juice
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 1 teaspoon sesame oil

Instructions 

  1. 1. Cook rice noodles according to package instructions. Drain and rinse with cold water.
  2. 2. In a large mixing bowl, combine cooked noodles, carrots, bell peppers, cilantro, and peanuts.
  3. 3. In a small bowl, whisk together soy sauce, lime juice, fish sauce, sugar, and sesame oil.
  4. 4. Pour dressing over the noodle mixture and toss to combine.
  5. 5. Serve immediately or chill for 30 minutes before serving.
