Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 Onion, chopped medium-sized
  • 2 cloves Garlic, minced
  • 4 cups Chicken Broth
  • 1 can Diced Tomatoes 14.5 oz
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Oregano
  • 1 package Cheese Tortellini 9 oz
  • 2 cups Spinach fresh
  • to taste Salt and Pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Pour in chicken broth and diced tomatoes. Bring to a boil.
  5. Add dried basil and oregano. Stir well.
  6. Add tortellini and cook according to package instructions, usually about 7-9 minutes.
  7. Stir in fresh spinach and cook until wilted, about 2 minutes.
  8. Season with salt and pepper to taste. Serve hot.
