Ingredients

  • 1 cup Red lentils
  • 1 medium Onion chopped
  • 1 medium Carrot chopped
  • 1 tablespoon Tomato paste
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 4 cups Water
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. 1. Rinse the red lentils under cold water until the water runs clear.
  2. 2. In a pot, sauté the chopped onion and carrot until softened.
  3. 3. Add the tomato paste, cumin, and paprika. Cook for another minute.
  4. 4. Add the rinsed lentils and water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until lentils are soft.
  5. 5. Use a blender to puree the soup until smooth. Season with salt and black pepper to taste.
  6. 6. Serve hot, optionally garnished with a sprinkle of paprika or fresh herbs.
