Ingredients 

Main Ingredients

  • 1 cup long-grain white rice
  • 1 can black beans drained and rinsed
  • 1 cup tomato sauce
  • 1 cup vegetable broth
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste salt
  • to taste black pepper
  • 2 tablespoon olive oil

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Stir in the rice, tomato sauce, vegetable broth, cumin, chili powder, salt, and pepper.
  5. Bring to a boil, then reduce heat to low and cover. Simmer for 20 minutes, or until the rice is cooked.
  6. Stir in the black beans and cook for another 5 minutes, until heated through.
  7. Fluff the rice with a fork and serve warm.
