Ingredients
Main Ingredients
- 2 cups Rotini pasta cooked and drained
- 1 cup Cherry tomatoes halved
- 1 cup Cucumber diced
- 1 cup Bell peppers diced (use a mix of colors)
- ½ cup Red onion thinly sliced
- ½ cup Black olives sliced
- ¼ cup Feta cheese crumbled
Dressing
- ¼ cup Olive oil
- 2 tablespoon Red wine vinegar
- 1 teaspoon Dijon mustard
- 1 clove Garlic minced
- 1 teaspoon Dried oregano
- to taste Salt and pepper
Instructions
- 1. Cook the pasta according to the package instructions. Drain and rinse under cold water.
- 2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell peppers, red onion, black olives, and feta cheese.
- 3. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, dried oregano, salt, and pepper.
- 4. Pour the dressing over the pasta salad and toss to combine.
- 5. Chill in the refrigerator for at least 30 minutes before serving.
