Main Ingredients
- 2 large Cucumbers smashed and cut into bite-sized pieces
- 1 teaspoon Salt
- 2 cloves Garlic minced
- 2 tablespoon Rice Vinegar
- 1 tablespoon Soy Sauce
- 1 tablespoon Sesame Oil
- 1 teaspoon Sugar
- 1 tablespoon Sesame Seeds toasted
Instructions
- 1. Smash the cucumbers with a rolling pin or the flat side of a knife until they crack and split. Cut into bite-sized pieces.
- 2. Place the cucumbers in a colander and sprinkle with salt. Let sit for 10 minutes, then drain any excess water.
- 3. In a mixing bowl, combine garlic, rice vinegar, soy sauce, sesame oil, and sugar. Stir until sugar is dissolved.
- 4. Add the cucumbers to the bowl and toss to coat evenly with the dressing.
- 5. Sprinkle with toasted sesame seeds before serving.
