

Greek Potato Salad Recipe

Main Ingredients
- 4 cups Potatoes, diced about 4 medium potatoes
- 1 cup Cucumber, diced
- ½ cup Red onion, finely chopped
- ½ cup Kalamata olives, pitted and sliced
- ½ cup Feta cheese, crumbled
- ¼ cup Fresh parsley, chopped
- ¼ cup Olive oil
- 2 tablespoons Red wine vinegar
- 1 teaspoon Dried oregano
- to taste Salt and pepper
Instructions
- 1. Boil the diced potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and let cool.
- 2. In a large mixing bowl, combine the cooled potatoes, cucumber, red onion, olives, feta cheese, and parsley.
- 3. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
- 4. Pour the dressing over the potato mixture and toss gently to combine.
- 5. Chill in the refrigerator for at least 1 hour before serving.
