Main Ingredients
- 1 cup lentils rinsed
- 1 cup ham diced
- 1 medium onion chopped
- 2 cloves garlic minced
- 1 cup carrots sliced
- 1 cup celery sliced
- 6 cups chicken broth
- 1 teaspoon thyme dried
- 1 teaspoon salt to taste
- ½ teaspoon black pepper to taste
Instructions
- 1. In a large pot, heat some oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- 2. Add the diced ham, carrots, and celery. Cook for a few minutes until the vegetables start to soften.
- 3. Stir in the lentils, chicken broth, thyme, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the lentils are tender.
- 4. Adjust seasoning if needed. Serve hot.
