

Mexican Rice and Beans Recipe

Ingredients
Main Ingredients
- 1 cup long-grain white rice
- 1 can black beans drained and rinsed
- 1 cup tomato sauce
- 1 cup vegetable broth
- 1 small onion chopped
- 2 cloves garlic minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- to taste salt
- to taste black pepper
- 2 tablespoon olive oil
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and cook until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute.
- Stir in the rice, tomato sauce, vegetable broth, cumin, chili powder, salt, and pepper.
- Bring to a boil, then reduce heat to low and cover. Simmer for 20 minutes, or until the rice is cooked.
- Stir in the black beans and cook for another 5 minutes, until heated through.
- Fluff the rice with a fork and serve warm.
