

New Mexico Green Chile Stew Recipe

Main Ingredients
- 2 lbs Pork shoulder, cut into cubes
- 1 tablespoon Vegetable oil
- 1 Large onion, chopped
- 3 cloves Garlic, minced
- 1 lb Roasted green chiles, peeled and chopped
- 4 cups Chicken broth
- 2 Large potatoes, peeled and diced
- 1 teaspoon Salt
- 1 teaspoon Ground cumin
- ½ teaspoon Dried oregano
- ¼ teaspoon Black pepper
Instructions
- 1. Heat the oil in a large pot over medium heat. Add the pork and cook until browned on all sides.
- 2. Add the onion and garlic to the pot and cook until softened.
- 3. Stir in the green chiles, chicken broth, potatoes, salt, cumin, oregano, and black pepper.
- 4. Bring the mixture to a boil, then reduce the heat and simmer for about 1 hour, or until the pork is tender and the potatoes are cooked through.
- 5. Serve hot and enjoy!
