Irish Lamb Stew Recipe

Ingredients
Main Ingredients
- 2 lbs Lamb shoulder, cut into chunks
- 4 Carrots, peeled and chopped
- 4 Potatoes, peeled and chopped
- 1 Onion, chopped
- 4 cups Beef broth
- 2 tablespoon Tomato paste
- 2 cloves Garlic, minced
- 1 teaspoon Dried thyme
- 1 teaspoon Salt
- ½ teaspoon Black pepper
- 2 tablespoon Olive oil
Instructions
- 1. Heat olive oil in a large pot over medium heat.
- 2. Add lamb chunks and brown on all sides. Remove and set aside.
- 3. In the same pot, add onion and garlic, cook until softened.
- 4. Stir in tomato paste, thyme, salt, and pepper.
- 5. Return lamb to the pot, add carrots, potatoes, and beef broth.
- 6. Bring to a boil, then reduce heat and simmer for 2 hours.
- 7. Serve hot and enjoy!
