

Colcannon Recipe
Colcannon is a traditional Irish dish made from mashed potatoes with kale or cabbage.

Ingredients
Main Ingredients
- 2 pounds potatoes peeled and cubed
- 1 cup kale chopped
- 1 cup milk
- 4 tablespoons butter
- 1 bunch green onions chopped
- to taste salt
- to taste black pepper
Instructions
- Boil the potatoes in a pot of salted water until tender, about 15 minutes.
- While the potatoes are boiling, melt 2 tablespoons of butter in a skillet over medium heat. Add the chopped kale and green onions, and cook until softened, about 5 minutes.
- Drain the potatoes and return them to the pot. Add the remaining butter and milk, and mash until smooth.
- Stir in the cooked kale and green onions. Season with salt and black pepper to taste.
- Serve hot.
