- 4 large onions, thinly sliced
- 2 tablespoon olive oil
- 1 cup sugar
- ½ cup red wine vinegar
- 1 teaspoon salt
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the sliced onions and cook, stirring occasionally, until they are soft and caramelized, about 25-30 minutes.
- Add the sugar, red wine vinegar, and salt. Stir to combine.
- Reduce the heat to low and cook for another 15 minutes, stirring occasionally, until the mixture is thick and jam-like.
- Let the onion jam cool before transferring it to a jar or container. Store in the refrigerator.
